Shrimp and Bechamel Crepes Recipe
First, prepare the pancakes following the savory crepes recipe in all its steps.
Thaw and wash the shrimp, then cook them in white wine for about 7-10 minutes.
In the meantime, prepare a bechamel by melting the butter with the flour in a pan, add the shrimp cooking juices, milk, and let thicken over low heat, stirring continuously to avoid lumps.
Once the sauce has thickened, salt, pepper, add lemon juice, chopped parsley, cooked shrimp, and gently mix.
Now all you have to do is fill each crepe with a bit of prepared bechamel: spread the mixture over the open pancake, then fold in half to get a half-moon and fold again in half to get a triangle.
Arrange the crepes on a tray and serve them hot. Enjoy your meal!
Storage and Tips
Storage: Shrimp crepes are best enjoyed hot and fresh. If you have leftovers, place them in a container with a lid and store them in the refrigerator for 1 day. Reheat before enjoying again.
Tips: You can steam the shrimp. If you want, you can replace the milk with liquid cream. If you have leftover crepes that are not yet filled, you can always use them to make chocolate crepe noodles.
