Gluten-free and lactose-free jam roll, a soft, super quick sweet recipe and butter-free, suitable for those intolerant to gluten and lactose, a dessert that bakes in the oven in 8 minutes, with a base made from simple ingredients: sugar, eggs, baking powder and potato starch that makes it extremely soft and suitable even for celiacs.
The rolled dessert with jam is perfect for breakfast, snack, or as an after-dinner dessert, suitable for the whole family, and for an equally delicious variation, I recommend trying the almond milk cream roll.
In today’s jam roll recipe, I soaked the cake base with a few drops of alchermes liqueur to make it even more delightful; of course, you can skip it if you have kids at home.
An easy and quick dessert to make even at the last minute, you can fill it with any flavor of jam but also with hazelnut cream, pistachio cream or why not make a chocolate and chantilly cream roll, a real treat. Until next time!

Ingredients
- 4 eggs
- 1 cup sugar
- 1 cup potato starch
- 1 teaspoon gluten-free baking powder
- 1.5 cups jam
- to taste alchermes (optional)
- to taste gluten-free powdered sugar (for decoration)
- A few leaves mint (for decoration)

Recipe
Separate the egg yolks from the whites and beat the whites until stiff peaks form with an electric mixer, then add the sugar, egg yolks, and blend again.
Add the sifted flour where you have mixed the baking powder and combine the ingredients until you get a smooth mixture.
Line a baking tray with parchment paper and spread the mixture evenly with a spoon over the entire surface.
Bake the roll base in a preheated static oven at 390°F for about 8-10 minutes and until the dessert turns hazelnut color.
Once baked, remove from the oven and immediately flip it onto another sheet of parchment paper (or a towel) dampened and well wrung out, then gently remove the baking parchment.
Sprinkle the alchermes over the surface here and there (optional) and then spread the jam, leaving a few spoonfuls aside for the final decoration; I recommend not going all the way to the outer edges with the filling, otherwise the jam will leak out when you roll the cake.
Now roll the dessert helping yourself with the parchment paper and be careful not to let the jam spill out.
All that’s left is to place your gluten-free jam roll on a tray, dust it with powdered sugar, and decorate as desired with jam and mint leaves.
Serve it whole or sliced into rounds.
Storage and Tips
Storage: the jam roll keeps at room temperature for 1-2 days under a glass dome.
Tips: if you don’t have a problem with celiac disease you can replace the potato starch with the same amount of flour.
