Simple recipe: hazelnut lady kisses also achievable with almonds, typical cookies from Piedmont pastry that have conquered the whole world for their delight! Quick to prepare, delicious like cocoa kisses, they keep for a long time and have a crumbly shortcrust that melts in your mouth.
Why are they called lady kisses? These delightful sweets get their name because the two spheres joining together thanks to the dark chocolate, resemble two lips kissing. Perfect for any occasion, at home we love them, our favorites are the hazelnut kisses but you can replace them with the same weight of almonds. You can get creative by filling them with chocolate, hazelnut cream, or pistachio cream…it’s your choice.

Ingredients
Servings for about 24 cookies.
- 1 cup all-purpose flour
- 2/3 cup sugar
- 5.3 oz toasted hazelnuts (or almonds)
- 1 stick butter (softened)
- 2.5 oz dark chocolate (for filling)
Tools
- Mixer
- Baking sheet
- Pot for double boiling
- Bowl
Recipe
Grind the hazelnuts finely with a mixer, transfer them to a bowl along with the sifted flour, sugar, and softened butter.
Mix well until you obtain a homogeneous dough (if necessary, help knead with your hands).
From the obtained mixture, make balls with a diameter of 0.5-1 inch maximum and roll them between your palms to make them as smooth as possible. Place them on a baking sheet lined with parchment paper next to each other, spacing them slightly apart.
Bake in a preheated static oven at 350°F for 15 minutes, then remove from oven and let cool.
In the meantime, break the chocolate into pieces and melt it using a double boiler, then using a teaspoon, place some in the center of the base of half of the cookies, pairing them with the other halves (you can also use a piping bag).
The dark chocolate, as it cools, will bond the kisses together.
Here they are, your lady kisses, beautiful, right? But most importantly, good! Who among you has never tasted them? Each pastry shop offers its own version. Well, from today you can try to replicate them at home too. Believe me, they are really simple and turn out great. Perfect to present to your guests, ideal for gifting to your loved ones.
Storage and Tips
Storage: lady kisses can be stored for a week in a tin box or cookie jar at room temperature.
Tips: if you use almonds, remember to toast them in the oven for 10 minutes at 350°F.
If you want to make the dough more consistent and not flatten the cookies too much during baking, wrap the dough with plastic wrap and let it rest in the fridge for 1 hour (I skipped this step due to time constraints, but the cookies turned out perfect anyway…just as you see in the photos).
You can also fill them with hazelnut cocoa cream or pistachio cream.
