Do you know the Trapani-style pesto? Well, my recipe for pesto with yellow cherry tomatoes, basil and almonds is very similar, both in ingredients and quantities, I just replaced the red cherry tomatoes with yellow date tomatoes. The result? Delicious, with the delicate and sweet taste typical of these tomatoes, a unique flavor and aroma. Perfect for dressing any type of pasta, short or long, it is used like zucchini and basil pesto or the classic basil and walnut pesto.
Of course, it is prepared in a flash, with all raw ingredients placed in the mixer and blended for a few minutes… a real help in the kitchen during hot days to avoid turning on the stove or oven.
I recommend you try it, especially if like me… you have lots of yellow cherry tomatoes to use up.

- 10.5 oz yellow cherry tomatoes
- 1 cup basil
- 1.75 oz peeled almonds
- 1.75 oz pecorino (grated)
- 3.5 oz extra virgin olive oil
- 1 clove garlic
- to taste salt

Recipe pesto with yellow cherry tomatoes, basil and almonds
To start, wash and dry the basil and yellow cherry tomatoes thoroughly, then weigh all the other ingredients to be ready to prepare your pesto.
In the food processor, place the yellow cherry tomatoes and a peeled garlic clove cut into pieces, then also add the basil leaves.
Turn on the mixer and give it a first blend. Then add the almonds, grated pecorino, oil, salt, and pepper. Continue blending until all the ingredients are finely chopped. If necessary, add more oil to achieve the desired pesto consistency.
Easy and super quick, right? Practically a condiment that you can prepare while the pasta is cooking!
The yellow date tomato pesto is very practical, it can be stored in the fridge and taken out when needed… very useful in summer!
Storage and tips
Storage: yellow cherry tomato pesto can be stored in the refrigerator for 3-4 days in a glass jar and covered with a thin layer of oil.
Tips: if you want, you can replace pecorino with good aged parmesan.
Attention: if you do not want the presence of tomato skins in the pesto, just remove them after immersing the tomatoes in boiling water for a few minutes and proceed as per the recipe.
