I love making single-serving desserts because they are much more practical to serve; sometimes I put them in ice cream cups, other times in jars or glasses. Today, I indulged in this treat because I had some fresh cream nearing expiration, so all I had to do was whip the cream and mix it with some pineapple yogurt, and the rest came together easily.

- 1 cup oz heavy whipping cream
- 1 cup yogurt (pineapple-flavored)
- 1 can pineapple, canned (small)
- 48 amaretti
- to taste chocolate sprinkles (for decoration)

Recipe
Delicious, refreshing, and very fast!
In a bowl, whip the cream with an electric mixer, then add two cups of yogurt and stir.
Leave 4 slices of canned pineapple aside and cut the remaining slices into small pieces.
Put the pineapple juice in a bowl, which will be used to soak the amaretti.Place 3 lightly soaked amaretti in the bottom of the cup and cover with a layer of cream and yogurt.
Create another layer of soaked amaretti, then distribute the pineapple pieces on top.
Cover with the cream and yogurt mixture and level the entire surface with a spatula.
Now all that’s left is to decorate the cup: place a whole pineapple slice in the center, crumble 2 amaretti, and sprinkle some chocolate sprinkles.
Refrigerate until it’s time to serve.
STORAGE AND TIPS
Storage: the pineapple cup can be kept in the refrigerator for up to 1-2 days, covered with plastic wrap.
Tips: you can also prepare this cup with other canned fruits like fruit salad, peaches, etc. I recommend using yogurt that matches the flavor of the chosen fruit.
