PINEAPPLE SEMIFREDDO WITH LADYFINGERS

Pineapple semifreddo with ladyfingers and yogurt, a no-bake cold cake with pineapple, fresh, summery and very quick. A recipe very similar to the strawberry semifreddo cake and to make it you will need a few basic ingredients like canned pineapple, cream, yogurt, and ladyfinger cookies for the base.

A delicious fresh summer dessert that will take you very little time to make. In just 15 minutes, it will be ready to be placed in the freezer. Just make sure to whip the cream properly, and then assembling it will be very easy.

Ingredients

Portions for about 6-8 servings.

  • 1 cup heavy whipping cream
  • 1 cup yogurt (pineapple-flavored)
  • 7 oz canned pineapple
  • 3.5 oz ladyfingers

Tools

To make this semifreddo, I used a springform pan of 18 cm (7 inches) in diameter, thus obtaining a small but tall cake. You can also use a slightly larger pan, keep in mind that the height of the cake will be slightly lower.

Recipe

Fresh, summery, quick!

  • Separate the pineapple slices from their syrup, leaving 4-5 whole slices for the final decoration of the cake, and chop the remaining ones.
    Prepare the springform pan by placing it without the bottom directly on a serving plate.

  • Soak the ladyfingers in pineapple juice and make a layer on the bottom of the plate inside the pan.

  • With an electric mixer whip the cream and gently mix it with the pineapple yogurt.
    Spread the chopped pineapple over the ladyfingers, then cover everything with the cream and yogurt mixture.

  • Level the surface and decorate as desired with the remaining whole pineapple slices.
    Place in the freezer for an hour, then remove the springform pan and serve the dessert directly on the chosen serving plate.

  • This pineapple semifreddo is really delicious, a perfect delight to refresh yourself on hot summer days. A simple, very quick dessert but, above all, without baking.
    If you want to make it even more pleasant, add a few mint leaves just before serving, with this cake you will amaze your guests.

Storage and Tips

Storage: you can store the semifreddo in the freezer for up to a month using fresh products. In this case, remember to take the semifreddo out at least 4 or 5 hours before to let it sit at room temperature before serving.

Variations: you can also make the semifreddo with berries, strawberries, or other fruits of your choice. You can also make it in a loaf pan lined with plastic wrap. You can replace the ladyfingers with Pavesini cookies.
