Wash the potatoes well and peel them with a peeler, cut them into pieces the same size as the pumpkin.
Choose the herbs you like and clean them carefully.
Chop them all together finely with a mezzaluna or a mixer.
Put the pumpkin and potatoes in a bowl, spray a little olive oil, add salt and pepper.
Add the chopped herbs and mix everything together.
Line the basket of your air fryer with parchment paper.
Place the pumpkin and potatoes in a single layer and cook at 375°F for about 18 minutes, turning them halfway through.

Storage and Tips
Storage: once cooked, you can store the side dish in the refrigerator in a container with an airtight lid for 1-2 days.
Tips: you can use herbs to your taste, and if you don’t have an air fryer, you can always make this side dish in a traditional oven.
With the seeds you remove from the pumpkin, I recommend preparing some tasty oven-toasted pumpkin seeds.
