Ingredients

  • 2 eggs
  • 3/4 cup sugar
  • 1/2 cup butter
  • 2 cups flour
  • 1 cup almonds (Coarsely chopped)

Recipe

  • Let the butter soften at room temperature and mix it with 1/4 cup of sugar, then incorporate the eggs and stir. Add the sifted flour and mix again.
    Add the coarsely chopped almonds to the dough using a mixer and knead with your hands until you get a homogeneous ball.

    Now shape your cookies: with a bit of dough, form rods about 2 inches long, roll them in the remaining sugar, and place them one next to the other on a baking sheet lined with parchment paper.

    Bake in a preheated static oven at 480°F for 12-15 minutes.

Storage and Tips

Storage: kept in a cookie jar or a tin box, they will keep for 3-4 days.

Tips: do not grind the almonds into flour; they should be coarsely chopped. When using the mixer, I recommend using it in pulses rather than continuously.
