Grilled Chicken and Vegetable Salad Recipe
A fresh, quick, and summery main dish.
Grill the chicken breasts in a grill pan, lightly salted.
Then let them cool and cut them into pieces.
Wash and clean all the vegetables: tomatoes, onion, carrot, lettuce, and also prepare the lemon for the dressing.
Have the pitted olives ready (taggiasca, green olives, black olives, etc. are fine)
Now, all you have to do is cut the tomatoes into pieces, the lettuce into strips, the carrot and onion into rings, and mix everything in a bowl. Then add the olives and chicken pieces. Adjust the salt, pepper, dress with extra virgin olive oil, lemon juice, and mix.
Place in the fridge until serving, and if you wish, add some sliced almonds.
