Ingredients

  • 1 roll puff pastry
  • 2 eggs
  • 3.5 oz cooked ham (diced)
  • 2.2 lbs sheep ricotta
  • 3.5 oz grated Parmesan
  • 1 clove garlic
  • 1 bunch parsley
  • to taste nutmeg
  • to taste pepper
  • to taste salt
  • to taste sesame seeds (for garnishing)

Recipe

  • Using the mezzaluna, chop the parsley and a clove of garlic.
    In a large bowl, place the ricotta, diced cooked ham, grated Parmesan, chopped parsley and garlic, and beaten eggs (reserve some to brush the edges of the pastry at the end), nutmeg, salt, and pepper. Mix everything together until the ingredients are well combined.

  • Unroll the puff pastry and place it, with its baking paper, in a 10-inch springform pan. Since the diameter of the pastry is larger than the pan, you’ll have raised pastry on the edges.
    Fill the base with the prepared ricotta and ham mixture, leveling it on the surface, then fold over the pastry edges, brush them with the reserved beaten egg, and garnish with sesame seeds.
    Bake in a preheated static oven at 350°F for about 35 minutes or until the pie is nicely golden.
