The soft cookies with jam in the middle are simple shortbread cookies with jam added before baking, a simple and quick butter shortbread recipe made with lemon-scented dough. A variant of homemade cherry jam cookies, delicious and crumbly.
In my sweet recipes, I often use jam or preserves. My latest preparation was a gluten-free jam roll that I made for my niece. I like all flavors, starting with blackberry jam, which I used for the cookies today, but I also love mixed berries, blueberries, basically any jar is perfect for me.
These soft cookies are easy to prepare. Once the dough is ready, just make balls by pressing lightly in the center to fill them with jam, and they’re ready for baking. Simple, right? Let’s follow along in the kitchen and see how to prepare them step by step.

Ingredients
- 2 cups all-purpose flour
- 1 egg
- 10 tbsp butter
- 2/3 cup sugar
- 1 teaspoon baking powder
- 1 vial lemon flavoring
- 5 oz jam (flavor of your choice)
- 1 pinch salt
- as needed powdered sugar (for decoration)
Tools for making jam cookies
- Baking tray
- Sieve
- Kneading board
- Plastic wrap
Recipe
On a kneading board, sift the flour together with the baking powder, arrange it in a mound and place the sugar, an egg yolk, a pinch of salt, and a vial of lemon flavoring in the center.
Start mixing the ingredients and reshape the mixture into a mound.
Add the softened butter in pieces at room temperature and work it quickly but not for too long.
Once the ingredients are combined, make a compact ball and let it rest in the refrigerator for 30 minutes, covered with kitchen plastic wrap.
After the resting time, take the dough and form round balls about the size of a walnut.
Place the balls on a baking sheet lined with parchment paper, slightly spaced apart, then press down lightly with your index finger or the handle of a wooden spoon to create a hole in the center of the ball.
Fill the cavity of each cookie with about half a teaspoon of jam and bake in a preheated oven at 392°F in static mode for 15 minutes.
Want to make your jam cookies even more delicious? Do this:
lightly beat the remaining egg white, dip the balls halfway, then roll them in almond granules (you’ll need about 1.75 oz for all the cookies), then continue with the preparation and baking steps as indicated above.
In conclusion, I recommend trying some cookies in this version too. You’ll love them!
Can you smell it? These are our jam cookies just out of the oven.
Finally, before serving them, sprinkle with powdered sugar.
They are so delicious they won’t last long in the cookie jar, so why not make another batch? Perhaps with a different jam flavor.
