Recipe: spoon dessert with strawberries and yogurt
Fresh, creamy, delicate.
Wash and dry the strawberries, then cut them into pieces. Save some whole for the final decoration.
Put the cut strawberries in a bowl with a tablespoon of granulated sugar and the juice of a lemon. Stir and let macerate for at least 15 minutes, then blend 1/3 with the immersion blender.
In a cold bowl, whip the cream with a tablespoon of powdered sugar until stiff peaks form (here you can find all my tips on how to make perfect whipped cream), then add the yogurt, mix, and keep in the refrigerator.
Attention: before starting to layer the dessert, mix the previously blended strawberries into half of the whipped cream and yogurt mixture.
Important note: there is no need to soak the Pavesini! When assembling the dessert in layers, simply alternate them with the macerated strawberries (which will have already released their juice) and the yogurt and cream mixture. You will see that, during the rest in the fridge, the Pavesini will soften on their own thanks to the moisture from the other ingredients. Now assemble the dessert using a suitable dish.
Pour a few spoonfuls of white cream on the bottom, then arrange the Pavesini side by side, exactly like in the strawberry tiramisu. On top of these, distribute a layer of strawberries, then the cookies again, and cover with the pink cream (the one where you mixed the blended strawberries).
Continue alternating the Pavesini with a layer of strawberries, and finish with a layer of white cream (yogurt and whipped cream). Finally, with a spoon, create thin pink cream threads by drizzling it in a zig-zag pattern over the dessert.
Complete the dessert with whole strawberries and a few mint leaves. If desired, you can enrich with white (or dark) chocolate shavings. Let rest in the refrigerator for at least 30 minutes before serving.
When the nice weather arrives, the desire for fresh and light desserts becomes evident. This spoon dessert was born just like that: on a spring afternoon, with ripe strawberries scenting the kitchen and a handful of Pavesini cookies asking to become part of something good. In soft and delicious layers, this dessert is an encounter between the sweetness of strawberries macerated with sugar and lemon, the freshness of yogurt and the creaminess of whipped cream.

Storage and tips
Storage: this dessert is unlikely to have leftovers, but if it does happen, you can store it in the refrigerator in a container with a lid for 1-2 days at most.
Tips: choose ripe and sweet strawberries: the quality of the strawberries really makes a difference. If they are very ripe and flavorful, you might even reduce the sugar in the maceration.
For a more elegant presentation, you can also serve this dessert in transparent glasses, glass jars, or small single-serving pots. The layered effect is very scenic and perfect for a dinner with guests or a party.
FAQ
Can I prepare this dessert in advance?
Yes! You can prepare it even the day before and store it in the refrigerator covered. In fact, a few hours of rest makes it even better because the flavors meld better.
What kind of yogurt is best to use?
I recommend a whole plain yogurt for a creamier consistency. If you prefer a sweeter taste, strawberry or vanilla-flavored yogurt is also fine. You can also substitute with Greek yogurt.
Can I make this dessert with other fruits?
Of course! Peaches, raspberries, blueberries, or apricots are great. The important thing is to let them macerate with sugar and lemon, just like the strawberries, to soften and enhance their flavor.
