STEWED GREEN BEANS WITHOUT BOILING

Stewed green beans without boiling or Tuscan-style green beans with tomatoes, cooked raw, the rustic side dish as prepared in my region. Few ingredients but all together in the pan with tomato, slow cooking, and the green beans will be delicious, without taking on the typical boiled flavor. Try using the green beans also in a rice salad with cooked vegetables.

How to make stewed green beans is very simple, in Tuscany it is a summer side dish often prepared with this seasonal vegetable. You can make them to accompany meat and fish, and with this recipe, long green beans called snake beans are also delicious.

Today I made green beans with tomato adding bacon to make them even more appetizing, but you can also make them without bacon for a lighter taste suitable for the whole family.

  • First, clean the green beans by trimming the ends, and if needed, remove the string along the bean.

  • In a pan, fry the oil with 2 cloves of garlic, then add the tomato puree, water, and the bouillon cube.

  • Sauté for about 5 minutes, add the cleaned green beans and the chopped bacon, and season with salt. Cook on low heat with a lid for about 75 minutes or until the beans are tender.

Storage and Tips

Storage: Once cooked, stewed green beans can be stored in the fridge for 2-3 days in a container with a lid. I recommend reheating them before enjoying again.
