Ingredients
- 1.1 lbs potatoes
- to taste olive oil
- to taste salt
- to taste herbs (rosemary, sage, thyme, etc.)

Recipe
Wash the potatoes and peel them with a potato peeler, then slice them thinly with a smooth-bladed knife (you can also use a mandoline).
Rinse them under running water, spread them on a tea towel and pat them dry with paper towels.Place the potatoes on a baking sheet previously lined with parchment paper, salt them, season with oil, and evenly distribute a mince of rosemary (or other herbs to taste).
Bake in a hot oven at 392°F for about 15 minutes, placing them under the grill for the last few minutes.
