ARUGULA AND ORANGE SALAD

Arugula and orange salad, a fresh and tasty salad with a sweet and slightly peppery flavor. With the addition of Grana Padano cheese and olives it becomes a great light main course. The recipe is inspired by the classic orange salad, originating from Spain and Sicily. It is a recipe that has now travelled the world and is offered with various additions such as, in this case, arugula and Grana cheese.

Ingredients

  • 4 cups arugula (about 80 g)
  • 2 oz Grana Padano PDO (shaved)
  • 2 Washington Navel oranges, fresh
  • 24 black olives in brine
  • 2 tbsp olive oil
  • to taste fine salt
  • to taste mixed whole peppercorns

Tools

  • 2 Oval serving plates
  • 1 Cutting board
  • 1 Vegetable peeler
  • 1 Strainer

Preparation: Arugula and Orange Salad

  • Supreme the oranges (remove the peel and pith) and then slice them into rounds no thicker than 3/16 inch (about 0.2 in).

  • Once the slices are cut, take the plates you’ll use to serve the salad and make a bed of arugula on which you will place the orange slices.

  • Use the peeler to shave thin slices of Grana Padano cheese.

  • Lay the shaved Grana on the salad and add the black olives in brine that you have drained well in a strainer.

  • Now all that’s left is to dress the salad with olive oil, a pinch of salt and a grating of fresh pepper to taste.

    And voilà… your arugula and orange salad is ready to serve.

Useful tips

If you like, instead of pepper you can try a light pinch of ground chili pepper.

It is also excellent with blood oranges.
