Arugula and orange salad, a fresh and tasty salad with a sweet and slightly tangy flavor. With the addition of Grana cheese and olives, it becomes an excellent main dish. The recipe is inspired by the classic orange salad, originating from Spain and Sicily. It’s a recipe that has traveled around the world and is proposed with the addition of various ingredients such as, in this case, arugula and Grana cheese.

Ingredients
- 2.82 oz arugula
- 2.12 oz Grana Padano DOP
- 2 Washington Navel oranges, fresh
- 24 black olives in brine
- 2 tbsps olive oil
- to taste fine salt
- to taste mixed peppercorns

- 2 Oval Plates
- 1 Cutting Board
- 1 Peeler
- 1 Strainer
Preparation of Arugula and Orange Salad
Peel the oranges to remove the white pith and then cut them into slices no thicker than half a centimeter.
Once you have cut the slices, take the plates on which you will serve the salad and make a bed of arugula on which you will lay the orange slices.
Using the peeler, cut some slivers from the Grana cheese.
Then place the Grana slices on the salad to which you will also add the black olives in brine that you have drained well in a strainer.
Now all that’s left is to dress the salad with olive oil, a pinch of salt, and a grind of fresh pepper to taste.
And voilà… your arugula and orange salad is ready to serve.
Useful Tips
If you like, instead of pepper, you can try a light pinch of chili powder.
It is also great with blood oranges.
