Ingredients
- 12 oz carrots (4 medium)
- 1 leek (medium)
- 1 yellow onion
- 10.5 oz potatoes
- 4 tbsps olive oil
- to taste fine salt
- to taste mixed peppercorns
- 1 tbsp sweet mustard

Preparation of Baked Potatoes and Vegetables with Mustard
Wash and clean the carrots then cut them into slices about half an inch thick and place them on a baking tray lined with parchment paper.
Do the same for the leek, wash it and cut it into slices the same thickness as the carrots. Then place it in the tray.
Now clean the potatoes and cut them into small pieces, about 1 inch by 1 inch.
Once cut, place them in the tray.
Add a sliced onion in not too large wedges to the potatoes and vegetables.
Season everything with 2 tablespoons of olive oil, a couple of pinches of salt, and a grind of fresh pepper. Mix well and spread the vegetables over the entire surface of the tray.
Cover the tray with aluminum foil and bake in a hot oven at 356°F for 15 minutes.
After 15 minutes, remove the foil and cook for another 15 minutes at 356°F.
In the meantime, prepare the mustard sauce by mixing 2 tablespoons of oil with a generous tablespoon of mustard. Stir to combine well.
When the vegetables are cooked, remove the tray from the oven and season with the mustard sauce.
And voilà… your baked potatoes and vegetables with mustard are ready to be served.
Useful Tips
If you like, you can add broccoli or cauliflower.
You can replace sweet mustard with spicy mustard.
