Ingredients
- 1 sheet puff pastry (rectangular)
- 1 peach
- 5.6 oz brie
- 1 tsp rosemary (dried)
- 1 tbsp milk
- to taste acacia honey
- 1 tbsp chopped pistachios

Preparation Brie and Peach Puff Pastry
Remove the puff pastry from the fridge and unroll it on a baking tray.
Fold the edges over themselves to form a border.
Then cut the brie cheese into slices about a quarter inch thick and place it on the puff pastry.
Wash and dry the peach well, then cut it into thin slices like the brie.
Then place them on the pastry.
Sprinkle everything with rosemary and finally brush the edges with milk.
Now bake in a preheated oven at 350°F for 18/20 minutes.
Once cooked, remove from the oven and garnish with chopped pistachios and acacia honey.
And voilà… the brie and peach puff pastry is ready for your appetizer or buffet with friends and family.
Useful Tips
If you don’t like peach, you can replace it with a yellow nectarine.
Regarding the honey, you can also use wildflower or orange honey, which pair well with the sweetness of the fruit and brie.
I recommend removing the puff pastry from the fridge a few minutes before using it, to let it warm slightly to room temperature. This way, when you unroll it, it won’t tend to crack, especially the end part where it’s rolled more tightly.
