CABBAGE AND SOY SALAD

Cabbage and soy salad, a super quick and easy salad to prepare. There are no ingredients to cook, and it is really tasty and flavorful. Perfect if you are on a diet or follow vegetarian or vegan dietary regimes. In the recipe, I used my ONIONS OF TROPEA IN OIL which are the ingredient that binds all the other ingredients used in the recipe. I serve this dish as a single main course because it contains both vegetables and proteins, but you can easily serve it as an appetizer or in small bowls for aperitif.

Ingredients

  • 4 1/4 cups savoy cabbage
  • 1 Golden Delicious apple
  • 1 cup soy protein isolate (in grains, steamed)
  • 5.3 oz onions (in sweet and sour or in oil)
  • to taste fine salt
  • to taste black peppercorns

Tools

  • 1 Cutting board
  • 1 Knife
  • 2 Plates

Preparation Cabbage and Soy Salad

  • Clean, wash, and dry the cabbage well, then cut it into strips about a quarter inch thick.

  • Then place the cabbage strips on the bottom of the plates you will use to serve at the table and add the onions of Tropea in oil.

  • Wash the apple, cut it into 4 parts, remove the core, and slice it into pieces no more than a quarter inch thick.

  • With the apple slices, create fans and place them around the cabbage and onions.

    Then add the cooked soy grains and season with a pinch of salt and a generous grind of fresh black pepper.

  • And voilà… your cabbage and soy salad is ready to be brought to the table and enjoyed in all its goodness.

Useful Tips

I used the onions I prepare and preserve myself, but you can easily use sweet and sour or in oil jarred onions.

If you don’t like soy, you can replace it with cannellini beans or Spanish beans.
