Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup milk
  • 1 1/2 tbsp butter
  • 1 1/2 tbsp granulated sugar
  • 1 1/2 tbsp grappa
  • 1 egg
  • 1 lemon
  • 1 pinch fine salt
  • 6 cups sunflower seed oil
  • to taste powdered sugar

Preparation of Carnival Chiacchiere

  • In a bowl, pour the all-purpose flour, granulated sugar, and the egg. Now, with the electric whisk, mix to combine well.

  • Melt the butter in the microwave and pour it into the chiacchiere mixture along with the grappa and mix.

    Then add the grated lemon zest, a pinch of salt, and the milk.

    Mix until the ingredients are well combined.

  • Now, with your hands, form a well-compact ball.

    Leave it in the bowl, cover with plastic wrap, and let the dough rest at room temperature for 30/40 minutes.

  • After the resting time, divide the dough into 7/8 parts. Then take one piece at a time, flatten it slightly with your hands and then pass it through the pasta machine, starting with the widest spacing and then continue with the narrower one. By the end, they should be about a couple of millimeters thick.

  • Once you have obtained the strips of dough, cut them to give them a rectangular shape with a fluted pastry wheel.

  • When you have finished rolling out the chiacchiere, pour the oil into a large pot and heat it to 340°F

  • When the oil is hot, immerse the chiacchiere, a few at a time, and cook them until they are golden brown on both sides.

    Once cooked, place them on absorbent paper to remove excess oil.

  • When the chiacchiere are cold, transfer them to a serving plate, sprinkle them with powdered sugar

    And voila… your carnival chiacchiere are ready to be enjoyed in all their crispness.

Useful Tips

If you don’t have an electric whisk or a stand mixer, you can easily mix by hand.

For flavoring the chiacchiere, instead of lemon, you can use orange zest or cinnamon.

If you don’t want to use grappa, you can substitute it with amaretto or anise liqueur.
