CHRISTMAS COOKIES WITH OIL SHORTCRUST PASTRY

Christmas cookies with oil shortcrust pastry, made with a cocoa oil shortcrust pastry, glazed and decorated with small colorful chocolate candies. They can also be a “culinary” gift or small place markers for your holiday tables.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 2/3 cup powdered sugar
  • 2 eggs
  • 1/4 cup sunflower oil
  • 1 teaspoon baking powder
  • 1 cup powdered sugar
  • 1 egg white (about 1 oz)
  • 2 teaspoons food coloring (green)
  • as needed smarties

Preparation of Christmas Cookies with Oil Shortcrust Pastry

  • After the dough has rested, place the dough between two lightly floured sheets of parchment paper and roll it out with a rolling pin to about 1/4 inch thickness.

  • Now use the cookie cutters to cut the cookies and place them on a baking sheet lined with parchment paper.

    Bake in a preheated oven at 356°F for 12 minutes.

    Once baked, let them cool completely.

  • In a bowl, pour the powdered sugar and egg white, then whisk until you have a smooth and homogeneous mixture.

    Finally, add the powdered food coloring and beat again to mix everything well.

  • Pour the icing into a pastry bag and proceed with glazing the cookies and decorating them with colored candies.

    Let the icing harden for 2/3 hours.

  • And voilà… your Christmas oil cookies are ready to be bagged and gifted or snacked on while decorating the Christmas tree.

Useful Tips

Instead of chocolate candies, you can use silver dragees or colored or single-color chocolate sprinkles.

For the given dough amounts, you will get about 25 to 30 cookies, depending on the size of the cutters you use.

For the amount of food coloring, adjust to the degree of color you prefer.
