Ingredients

  • 3 cups grated coconut
  • 1.2 cups milk
  • 2 eggs
  • 2/3 cup granulated sugar
  • 3/4 cup almonds
  • 1 tsp ground cinnamon
  • as needed powdered sugar

Preparation of Cocada Coconut Treats

  • In a bowl, pour the sugar, add the eggs, and whisk everything until you get a nice frothy mixture.

  • At this point, add the coconut and mix well to combine everything.

  • Then add the milk and a teaspoon of cinnamon, mix again.

  • Now chop the almonds finely with a chopper.

  • Once chopped, pour them into the coconut mixture and mix everything well.

  • Line a baking dish of about 7×12 inches with parchment paper, then pour the cocada mixture and level it well with a spatula.

  • Bake in a preheated oven at 350°F for 30 minutes.

    Once cooked, remove from the oven and let cool completely before cutting into cubes.

    Before serving, sprinkle with some powdered sugar.

  • And voilà… the cocada coconut treats are ready to be served and enjoyed.

Useful Tips

The treats can be stored in the fridge for up to a week, just make sure to close them well in a container with a lid.

You can use any milk you like, either plant-based or traditional. Regarding the almonds, I used blanched ones, but unblanched ones work just as well.

If you prefer, instead of making a slab to cut into cubes, you can also make balls and bake the treats individually, in this case, halve the cooking time.
