CROSTINI WITH STRACCHINO AND APRICOTS

These crostini with stracchino and apricots are perfect for a unique and different appetizer. The cheese/fruit combination may seem daring, but it works very well, especially when the fruit is spiced and marinated just right.

Ingredients

  • 3 apricots (ripe but not soft)
  • 5.6 oz stracchino
  • 1 baguette
  • 3 tbsp olive oil
  • to taste fresh ginger
  • to taste fine salt
  • to taste mixed peppercorns
  • mint (a few leaves)

  • 1 Knife
  • 1 Crepe Pan

Preparation of Crostini with Stracchino and Apricots

  • Wash the apricots well and cut them into 4 wedges.

    Season them with a tablespoon of olive oil and set aside.

  • Cut the baguette into pieces about 4 inches long, then cut them in half as if making a sandwich.

    Drizzle the crumb side with a little olive oil and toast them in a preheated pan.

  • Once the baguette is toasted, remove it from the pan and set aside.

  • Clean any crumbs from the pan and then cook your apricots for about 3/4 minutes per side over medium heat.

  • They should be slightly colored but not too much, otherwise the apricots will tend to fall apart.

  • Once cooked, season with a grind of freshly ground pepper, a pinch of salt, and a grating of fresh ginger.

  • Now spread the stracchino on the baguette crostini and top with the sautéed apricots.

  • Finally, decorate with some fresh mint leaves. And voilà… now your crostini with stracchino and apricots are ready to be served.

Useful Tips

I used fresh ginger, but you can also use powdered ginger.

For a more rustic crostino, you can use whole grain bread.

To make the crostino even more delicious, you can drizzle with a bit of wildflower or acacia honey.
