Ingredients

  • 4 cups all-purpose flour
  • 1.4 cups water (room temperature)
  • 1 tsp active dry yeast
  • 1 pinch sugar
  • 2 tbsps olive oil
  • 2 tsp fine salt
  • 3 red onions
  • 9 oz yellow cherry tomatoes
  • 2 tbsps olive oil
  • 2 pinches fine salt
  • 1 sprig rosemary
  • 2 oz water
  • 2 oz olive oil
  • 2 pinches fine salt

Tools

  • 1 Non-stick baking tray
  • 1 Cutting board
  • 1 Knife
  • 1 Bowl

Preparation of Focaccia with Onions and Yellow Cherry Tomatoes

  • Immediately pour the yeast into the water with a pinch of sugar and stir to dissolve it well.

    Then pour the flour into the bowl of the stand mixer, start it and begin to pour about a third of the water and yeast, once absorbed add half of the remaining water.

  • Once this part of the water is absorbed, stop the mixer and add the fine salt and the remaining water.

  • Start the mixer and also add the olive oil.

  • Knead until you get a smooth and homogeneous mixture.

  • Leave the dough in the bowl, cover with plastic wrap, and let it rise at room temperature for 2 hours.

  • After 2 hours of rising, grease a 8×12 inch baking tray and slide the dough inside.

  • Now roll out the dough; if it doesn’t reach the edges, don’t worry because it will still need to rise. Once the dough is spread, cover and let it rise for another hour at room temperature.

  • While the dough is rising, wash and dry the cherry tomatoes well, then place them in a bowl and season with a tablespoon of olive oil, a pinch of salt, and the rosemary, some chopped and some left whole.

  • Then clean the onions and slice them finely.

  • Transfer them to a pan, add 1 tablespoon of olive oil, a pinch of salt, and let them cook over medium/low heat for 5-7 minutes, stirring occasionally.

    Once cooked, remove from heat and let them cool slightly.

  • After the focaccia rising time has passed, finish stretching it without pressing the dough too much.

  • Now start topping it with the cherry tomatoes and rosemary you seasoned earlier, also pouring the seasoning.

  • Then finish topping with the onions.

    Now all you have to do is cover again with plastic wrap and finish the rising for another 45 minutes.

    Once the rising is complete, prepare the brine in a glass by combining water, olive oil, and fine salt. Stir and then pour it over the focaccia.

    Bake in a preheated oven at 450°F for 15-20 minutes.

  • Once baked, turn off the oven, open the door and let it cool for a few minutes before serving.

    And voila… now your focaccia with onions and yellow cherry tomatoes is ready to be served.

Useful Tips

If you are a fan of not overly cooked onions, you can add them to the focaccia directly raw.

If, on the other hand, you find them a bit hard to digest, before slicing them thinly, cut the onions into 4 parts and soak them for at least 30 minutes in cold water before proceeding with the recipe.

Of course, you can replace the yellow cherry tomatoes with red, date, or cherry tomatoes.
