Ingredients
- 2.2 lbs potatoes
- 1 quart sunflower oil
- as needed water
- to taste fine salt

Preparation of French Fries
Peel the potatoes and then rinse them under water.
Now cut them into wedges trying to make them more or less the same size so that cooking is more uniform.
Once you have cut the potatoes, transfer them to a large bowl, then add water until they are completely covered.
Cover with a lid and let them rest for at least 30 minutes, a couple of hours would be even better.
After the resting time in water, drain them and rinse under running water then dry them well with a cloth or paper towels.
Now pour the oil into a large pot and bring it to temperature, about 356°F.
Once the temperature is reached, immerse a few potatoes at a time and fry until golden.
Once cooked, drain them and place them on a plate with paper towels to remove excess oil.
Salt the French fries to taste.
And voilà… your French fries are ready to be served.
Useful Tips
It can happen that the first batch of French fries you make becomes a bit soggy by the time the last ones are cooked. You can place the fries on a baking sheet and put them in the oven for 2/3 minutes at 428°F/446°F
In addition to salt, you can also use freshly ground pepper or aromatic herbs like thyme or rosemary to season them.
