Well Halloween is around the corner and since it has been celebrated here too in recent years, I have prepared some truly monstrous cupcakes, namely the Halloween Eye Cupcakes! A classic muffin quick to make but with a horribly fun topping….

Ingredients
- 2.1 oz sugar
- 1/2 cup Butter (softened)
- 3 Eggs
- 1 tbsp Vanilla extract
- 1.9 cups Flour
- 1 packet baking powder
- 7 oz Powdered sugar
- 1/2 cup Butter (softened)
- 2 tbsp Milk
- 12 candy (eye-shaped)
- as needed red food coloring (preferably liquid)
Preparation
Combine sugar and softened butter and mix until you get a well-blended mixture. Incorporate the eggs one at a time and finally the vanilla extract.
In a bowl, mix baking powder and flour then add little by little to the mixture with eggs. Work everything until you get a smooth and homogeneous mixture.
Preheat the oven to 356°F
Place the cupcake liners in a muffin tray and fill them 2/3 with the batter.
Bake at 356°F for about 20 minutes. Before removing from the oven, do the toothpick test to make sure they are well cooked.
Let the muffins cool, preferably on a rack.
Meanwhile, let’s prepare the cupcake topping by working the softened butter with the powdered sugar and milk with electric whisks. You will get a smooth but rather compact cream.
Pour the buttercream into a piping bag and proceed to decorate the cupcake irregularly as if the buttercream were a mummy bandage.
After the first pass, take the red food coloring and pour a few drops in the center of the buttercream then place the eye-shaped candies on the cupcakes, pressing slightly to hold them in place, which will also cause the coloring to drip slightly. With fingers stained with coloring, touch the candies so that the eyes have kind of bloody fingerprints.
Now all that remains is to serve these monstrous cupcakes to the guests at your Halloween party.
