LENTIL PASTA WITH TWO TOMATOES

Light yet hearty dish, the lentil pasta with two tomatoes can pass for a first course but is actually a main course based on legumes and vegetables. If you are following a diet where you can’t indulge in classic pasta, this is a great alternative. If you have vegan friends, try it at your next dinner and surprise them.

Ingredients

  • 4.6 oz lentil pasta
  • 10.6 oz cherry tomatoes (or grape tomatoes)
  • 4 tablespoons tomato sauce
  • 1 pinch sugar
  • to taste salt
  • 1 pinch garlic powder
  • 1 teaspoon dried oregano
  • Half teaspoon rosemary (chopped)
  • 2 teaspoons olive oil

Preparation of Lentil Pasta with Two Tomatoes

  • First, immediately start boiling water for the pasta. When it boils, salt it and throw in the lentil pasta, just like traditional pasta.

    Now wash the cherry tomatoes well, then cut them in half and place them in a large pan.

    Add the tomato sauce and a pinch of sugar.

    Cook for 5 minutes over medium/low heat.

  • After 5 minutes of cooking, add garlic, chopped rosemary, dried oregano, and a pinch of salt to the tomatoes.

    Cook on low heat for another 2/3 minutes.

    When the lentil pasta is almost done, drain it and place it directly in the pan with the sauce.

    Add the olive oil, stir and let the lentil pasta with two tomatoes absorb the flavors until cooking is finished.

  • And voila… now the lentil pasta is ready to be served and impress your guests.

    Vegan or not, you’ll see what a great impression it makes!

Useful Tips

For this recipe, I recommend using short pasta because it yields more than spaghetti.

You can substitute lentil pasta with chickpea or pea pasta.

If you don’t have fresh rosemary, the dried one in a jar is fine too.
