Ingredients

  • 1 mango
  • 7 oz Iceberg lettuce (already cleaned)
  • 2.1 oz carrots (julienned)
  • 5.6 oz cottage cheese
  • 1.4 oz peeled almonds
  • 4 slices Whole Wheat Pan Bauletto
  • 2 tbsp olive oil
  • 2 pinches fine salt
  • mixed peppercorns

  • 1 Plate
  • 1 Pan

Preparation of Mango and Cottage Cheese Salad

  • Clean, wash, and dry the iceberg lettuce well, then cut it first into strips and then into pieces.

    Once cut, place it at the bottom of the serving plate and add the julienned carrots.

  • Peel the mango and cut it into cubes about half an inch on each side.

  • Meanwhile, toast the almonds for 4/5 minutes in a non-stick pan without using oil.

    Once toasted, chop some into pieces and leave some whole.

  • Add both the mango and the almonds, chopped and whole, to the salad.

  • In the pan where you toasted the almonds, add a drizzle of olive oil and toast the Pan Bauletto cut into pieces.

    Once toasted, place the croutons on the salad.

  • Finally, add the cottage cheese and season with olive oil, salt, and a generous grind of fresh pepper.

    And voilà… your mango and cottage cheese salad is ready to be served.

Useful Tips

Instead of iceberg lettuce, you can use baby greens or mixed greens, which are sweeter and more digestible. I do not recommend red radicchio as it is too bitter.

If you like, when toasting the croutons, you can add a pinch of garlic powder, but not too much; otherwise, it overpowers the other flavors.
