PARISIAN PIZZA WITH EGGPLANT PARMIGIANA

It is a pizza filled with eggplant parmigiana, covered by a layer of puff pastry. It could also be considered almost a savory pie. Ingredients

  • 1 roll pre-made pizza base
  • 1 roll puff pastry (rectangular)
  • 1 eggplant
  • 0.88 oz Grana Padano cheese, grated
  • 7.05 oz caciotta cheese (sliced)
  • 7.05 oz tomato sauce
  • 7.05 oz tomato puree
  • 1 tbsp olive oil
  • 1 pinch fine salt
  • 1 pinch granulated sugar
  • half tsp dried oregano
  • 1 pinch garlic powder

Preparation of Parisian Pizza with Eggplant Parmigiana

  • Wash and clean the eggplant then slice it thinly lengthwise.

  • Once sliced, lightly oil a grill, heat it up, and then start grilling the eggplant slices.

  • In the meantime, also prepare the tomato sauce.

    Pour the tomato puree into a small pot with the olive oil. Then add salt, sugar, garlic, and oregano. Stir and cook on low heat for about 5 minutes. Then set aside until needed.

  • Once the eggplants are cooked, unroll the pizza base on a baking tray, keeping its baking paper.

  • Spread about half of the tomato sauce on the base and then place the grilled eggplant slices.

  • Sprinkle everything with grated cheese and then add the remaining tomato sauce.

  • Now place the slices of caciotta cheese covering the entire base.

  • Then unroll the puff pastry and place it over the filled pizza base.

    Join the edges of the two doughs and make a small fold to prevent the filling from spilling out during cooking.

  • Prick the puff pastry with a fork, then bake in a preheated oven at 356°F for 25/30 minutes.

    Once cooked, turn off the oven, open the door, and let rest for a couple of minutes before serving.

Useful Tips

Take the pizza base and puff pastry out of the fridge a few minutes before using them to prevent breaking when unrolling, as they may crack when cold.

If you want an even tastier Parisian pizza and more similar to parmigiana, you can fry the eggplants.
