- 4.5 oz ridged ditalini
- 7 oz Mantuan pumpkin (already cleaned)
- 4.25 oz canned lentils
- 0.5 cup water
- 2 tablespoons olive oil
- to taste fine salt
- to taste mixed peppercorns
- 1 pinch thyme
- 1 pinch rosemary
- 1 cup cup vegetable broth

Steps for Pasta with pumpkin and lentils
First, heat up the water to cook the pasta; when it boils, salt it and add the pasta. Take the pasta out a few minutes before it is fully cooked, as it will finish cooking with the pumpkin and lentil sauce.
Also heat the broth and keep it warm. Meanwhile, prepare the sauce for the pasta.
Cut the pumpkin into small cubes, about half an inch, so they will cook quickly.
Put them in a large skillet, add one tablespoon of olive oil, a pinch of salt and the water.
Cook, covered, until the pumpkin is cooked.
Once the pumpkin is ready, remove it from the heat and mash it roughly with a spatula, leaving some parts more mashed than others.
Add the well-drained lentils, thyme, and rosemary.
Mix everything together, and when the pasta is ready, add it to the sauce along with the broth.
Put it on the heat and finish cooking without a lid.
At the end of cooking, adjust the salt and pepper.
Serve on plates and drizzle with a tablespoon of raw olive oil.
