PINK GRAPEFRUIT SALAD

Summer calls for light, tasty, and quick-to-prepare dishes… Here’s an idea for a pink grapefruit salad. A quick dish, different from the usual, and above all, delicious. I recommend it even if you’re having vegan or vegetarian friends over for lunch or dinner.

Ingredients

  • 1 pink grapefruit
  • 3 1/2 oz lamb's lettuce
  • 7 oz canned cannellini beans
  • 1 purple carrot
  • 1 tablespoon olive oil
  • 1 pinch fine salt
  • to taste mixed peppercorns

Tools

  • 1 Cutting Board
  • 1 Peeler

Preparation of Pink Grapefruit Salad

  • Open the can of cannellini beans and pour them into a colander. Rinse them under cold water to clean them from the preserving liquid. Then set aside to drain well.

  • Clean and wash the purple carrot, then use a peeler to cut it into strips.

  • Now peel a large pink grapefruit, cutting it into pieces and removing the pith between segments.

    While doing this, the grapefruit will release some juice. Don’t discard it, as it will be used to dress the salad.

  • Now all that’s left is to assemble your pink grapefruit salad, placing lamb’s lettuce at the base of the plate.

    Then add the cannellini beans, purple carrot strips, and finally the grapefruit pieces.

    Dress with olive oil and the grapefruit juice. Salt and pepper to taste.

  • And voilà… your pink grapefruit salad is now ready to be served.

Useful Tips

You can use white grapefruit instead of pink grapefruit.

If you like, you can use a pinch of chili instead of pepper.
