Ingredients
- 2 1/2 cups all-purpose flour
- 1/3 cup butter
- 1 egg
- 1/2 cup sugar
- Half packet baking powder
- as needed food colorings (in powder form)

Preparation: Rainbow Cookies
Pour the flour into the mixer bowl, then add the cold butter cut into pieces. Attach the paddle attachment and mix until you get a crumbly dough.
Stop the mixer and add the baking powder, the egg, and the sugar.
Mix until the ingredients are well combined.
Remove the dough from the mixer and form a ball with your hands.
Then divide into equal parts, as many as the colors you want to use.
Add the colorants, mix them well into the dough, then wrap with plastic wrap and refrigerate for 30 minutes.
After the resting time, take out one color at a time from the fridge and roll out the dough to about half a centimeter using a rolling pin. Once rolled out, cut the cookies into the desired shapes. Place the cookies on a baking sheet lined with parchment paper.
Proceed the same way with the other colors. The scraps can be combined to make multicolored cookies.
Once all the cookies are made, bake in a preheated oven at 350°F for 12-15 minutes.
When they are cooked, remove from the oven and let them cool.
And voila… your rainbow cookies are ready to be enjoyed.
Useful Tips
Since this is a shortcrust, I recommend using powdered colors because liquid ones would make the dough mushy and sticky.
You can use red, yellow, and blue colors to create the various shades you desire, just like you did with paints in school.
Besides making them for carnival, these cookies can also be made for birthday parties.
