Ingredients

  • 14 oz feta
  • 1.5 lbs cherry tomatoes
  • 0.7 oz crushed pistachios
  • 3 tbsps wildflower honey
  • 3.5 oz black olives in brine (pitted)
  • 1.8 oz golden onion
  • 4 tbsps olive oil
  • 2 pinches fine salt
  • 2 pinches mixed peppercorns
  • 4 cups baby lettuce, fresh (already cleaned and washed)

  • 1 Strainer
  • 4 Oval Plates

Preparation of Salad with Feta and Cherry Tomatoes

  • Wash and thoroughly dry the cherry tomatoes, then if they are quite large, cut them into wedges, otherwise just cut them in half.

  • Once cut, transfer them to a bowl and simply dress them with oil, salt, and freshly ground pepper.

  • Then clean the onion and slice it as thinly as possible into julienne strips.

    Add it to the cherry tomatoes, mix, and set aside to marinate.

  • Drain and cut the black olives in half.

  • Now start to compose the salad.

    Take the plates in which you want to serve the salad, make a bed of baby lettuce and then add the tomatoes with the onion.

  • Add the black olives as well.

  • Now cut the feta into cubes no more than 1 cm (about 0.4 inch).

  • Spread it over the bed of baby lettuce and tomatoes.

    Drizzle a tablespoon of wildflower honey over each plate of salad. Then finish with a sprinkle of crushed pistachios.

  • And voilà… the salad with feta and cherry tomatoes is ready to serve.

Useful Tips

Instead of cherry tomatoes, you can use datterini or piccadilly tomatoes.

If you don’t like pistachios, use walnut crumbs or leave them out.

If you have trouble digesting onions, you can chop them, soak them in cold water for 2/3 hours or at least 30 minutes, drain and then slice them into julienne strips.
