Sweet Focaccia from Alessandria, similar to the Genoese focaccia but with the peculiarity of being sweet due to the sugar it is made with. It is found in the bakeries of the Alessandria area and is consumed both at breakfast and as a snack. It’s very tasty and very simple to prepare.

Ingredients

  • 4 cups all-purpose flour
  • 1.4 oz granulated sugar
  • 1 packet active dry yeast
  • 1.35 cups water
  • 1 tsp fine salt
  • 1.5 tbsp olive oil
  • 0.2 cups water
  • 2 tbsp olive oil
  • 1.8 oz granulated sugar

  • 1 Parchment Paper
  • 1 Plastic Wrap

Preparation of Sweet Focaccia from Alessandria

  • In the bowl of the stand mixer, pour the all-purpose flour and the active dry yeast.

  • Start the mixer and add about 2/3 of the water available. Then work until the water is absorbed.

  • At this point, add the salt, sugar, oil, and the remaining water.

  • Work until all the ingredients are well combined and you have a smooth and homogeneous dough.

  • Cover with plastic wrap and let it rise at room temperature for a couple of hours.

  • After the 2-hour rising time, line a baking pan with parchment paper, lightly grease it with a tablespoon of olive oil, and spread the dough.

    Cover with plastic wrap and let rise for 30 minutes.

  • After 30 minutes, prepare the brine with water, oil, and sugar.

  • Pour the sweet brine over the focaccia and then make the classic focaccia dimples with your hands.

  • Let it rise for another 30 minutes without covering.

    Before baking, sprinkle the focaccia with 1 tablespoon of granulated sugar.

    Then bake in a preheated oven at 428°F for 12-13 minutes.

  • And voilà… the sweet focaccia from Alessandria is ready to be cut into pieces and served for a snack or why not also for breakfast.

Useful Tips

With the 30×30 cm pan, the focaccia is slightly thick; if you want it thinner, use a 35×35 cm or 40×40 cm pan. Remember to check the cooking time, as it will take 1 or 2 minutes less.
