For a tasty and different pasta, I recommend my tagliatelle with guacamole. A mix between Italy and Mexico that will make your mouth water. You can easily include this dish in a Tex-Mex dinner and perhaps satisfy those who never give up a plate of pasta.

Ingredients
- 12 oz tagliatelle
- as needed Water
- as needed Coarse salt
- 2 Avocado (ripe)
- 1 green chili pepper (alternatively 1 local chili pepper or 1 teaspoon of chili powder)
- 1 tomato
- 3 tbsps Olive oil (plus as needed)
- 1 Shallot
- as needed Salt
- 1 Lime
- 1 tomato

Preparation of Tagliatelle with Guacamole
First, put the water on to cook the pasta.
When it boils, add the coarse salt and toss in the pasta.

Once the guacamole sauce is ready, pour it into a large pan with a few tablespoons of olive oil and heat for a couple of minutes.
Drain the tagliatelle (reserve a glass of cooking water) al dente and pour them into the pan with the guacamole.
Stir and add half a glass of cooking water to mix and make the pasta creamy.
If it seems too dry, add a little more cooking water at a time.
Serve the tagliatelle with guacamole with a few cubes of fresh tomato.
And there you have it….. now the tagliatelle is ready to be served.
Useful Tips
I suggest preparing the guacamole sauce a day in advance to allow all the flavors to blend well.
You can use the type of chili pepper you prefer and, of course, in the amount you like.
