Ingredients RECIPES 3 PESTOS FOR TASTY MAIN COURSES

  • 1 roasted red bell pepper
  • 1/2 red onion (chopped)
  • 1 oz oz desalted capers
  • 1 oz oz pine nuts
  • 3 1/2 tbsp tbsp extra virgin olive oil
  • to taste salt
  • 1 3/4 oz oz yellow cherry tomatoes (+ 1 3/4 oz)
  • 1 3/4 oz oz blanched almonds
  • 1 oz oz pecorino cheese (grated)
  • 2 pinches oregano
  • to taste salt
  • 1 large zucchini
  • 1 clove garlic
  • to taste extra virgin olive oil
  • to taste basil and parsley
  • 1 3/4 oz oz pine nuts
  • 1 1/2 oz oz Grana Padano cheese (grated)
  • to taste salt and pepper

FOR THE PREPARATION OF THE RECIPES 3 PESTOS FOR TASTY MAIN COURSES

  • For the bell pepper pesto, put the roasted vegetable in a blender with the red onion, desalted capers, a nice bunch of parsley, and pine nuts.

    Pulse the blades intermittently, adding the EVO oil until you get a creamy mixture.

    Blend well and adjust the saltiness.

  • For the yellow cherry tomato pesto, coarsely chop about 1 3/4 oz after removing the seeds and the vegetation water.

    Also add the blanched almonds and grated pecorino cheese.  

  • Adjust salt and add the oregano.

    Pour the mixture into the blender, adding the extra virgin olive oil until you get a creamy pesto.

    Also chop 1 3/4 oz of yellow cherry tomatoes and add them to the already prepared pesto.

  • For the zucchini pesto, trim and wash the vegetable, then slice it into rounds.

    Heat a little oil in a pan and brown the garlic clove, adding the zucchini.

  • Also add the parsley mince and cook, then let everything cool.

    Put the cooked zucchini in the blender with pine nuts, herbs, and cheese.

  • Slowly pour in the EVO oil until you get a smooth sauce.

    Adjust salt and pepper.  

  • 3 PESTOS FOR TASTY MAIN COURSES are condiments that keep for 2/3 days in the refrigerator and are also delicious on croutons or for tasty bruschettas!
