How delicious are almonds, right? Today I made almond pastries, exquisite sweets that keep well and are typical of Sicily but also of other regions bordering the Mediterranean.
Almonds like other DRIED FRUITS are rich in vitamins and minerals but unfortunately are highly caloric, so you need to be careful especially if for various reasons your diet is particularly attentive to fats and calories.

ALMOND PASTRIES

Ingredients ALMOND PASTRIES RECIPE
- 7 oz blanched almonds
- 7 oz Sugar
- 1.75 oz egg whites
- 1 tsp Vanilla essence
- to taste candied cherries
- to taste pine nuts

Preparation ALMOND PASTRIES RECIPE
Grind the almonds with the sugar in a mixer until you have a fine flour-like powder.
Add now the egg white and the vanilla essence.
The dough should be quite firm.
Put it in a piping bag and form the pastries on a baking sheet.
Honestly, I made balls between the palms of my hands without using a pastry bag, but as always do what’s most convenient for you!
Put a candied cherry or some pine nuts on each almond pastry.
Let the almond pastries rest for at least 3/4 hours. Bake at 356°F (180°C) for 8/10 minutes, just long enough for the almond pastries to turn golden.
Let them cool completely then… enjoy with the almond pastries!
