Anchovies with Orange, Olives, and Pine Nuts

The baking dish of anchovies with orange, olives, and pine nuts photographed on a foggy day is not very inviting, but I assure you that this baked blue fish recipe is tasty and economical!

The recipe comes from the cooking show Le ricette del convento where these 3 friars, a “cook”, a “singer” and the Superior, enjoy conversing and preparing typical regional and Benedictine dishes.

It is a dish that, if it weren’t for the pine nuts which are priced like jewels, is poor and economical and is a tasty main course, just add a salad and it becomes complete!

The blue fish is rich in vitamins B, A, D, and minerals like calcium and phosphorus and is an excellent source of omega-3 fatty acids important for the nervous system and for preventing cardiovascular diseases.

INGREDIENTS

  • 1.76 lbs anchovies
  • 1 orange (juice only)
  • 1 glass white wine
  • 5.3 oz green olives (I found them pitted and crushed)
  • 1 lemon
  • to taste breadcrumbs
  • to taste pine nuts
  • to taste chili pepper
  • to taste parsley
  • to taste extra virgin olive oil
  • to taste salt

TO PREPARE THE RECIPE ANCHOVIES WITH ORANGE, OLIVES, AND PINE NUTS

  • On moderate heat, I toast the breadcrumbs, stirring well to prevent it from blackening too much.

    I chop the olives and slice the lemon.

  • I take the baking dish, add a splash of Evo oil, and make a first layer of cleaned and gutted anchovies,
    I place some lemon slices, some pine nuts, and some chopped parsley.

  • Now I add the chopped olives and chili pepper if you like, but it fits perfectly!
    I repeat the sequence of ingredients making more layers and finishing the fresh anchovies.

  • I pour the white wine into the dish, add a pinch of salt, and cover these layers with the breadcrumbs previously toasted in the pan.
    I add a drizzle of extra virgin olive oil and bake at 356°F for 10 minutes, then pour the orange juice and put it back in the oven for another 10/15 minutes at most!

  • Here is this blue fish main course ready to be served at the table!
