INGREDIENTS FOR APPLE AND CARROT CAKE RECIPE

- 2 1/2 cups all-purpose flour
- 4 eggs
- 1 cup sugar
- 1/4 cup potato starch
- 1/2 cup yogurt (plain sweet)
- 1 Golden apple
- 1 carrot
- 2 tablespoons rum
- 1 packet baking powder
- 1/2 oz white sprinkles (sugared stars)

FOR THE PREPARATION OF THE APPLE AND CARROT CAKE RECIPE
I start by grating apples and carrots that are clearly washed and peeled, then put them in a bowl with a splash of lemon.
Separately, I beat the eggs with the sugar to obtain a light and fluffy mixture to which I then add the plain sweet yogurt.
I sift the all-purpose flour with the potato starch and baking powder and add it to the previous mixture in several additions with a flexible spatula, using upward folding motions.
Now I add the carrots and apples with their juice that formed during the resting period and the rum.
I line a 9-inch springform pan with release spray or oil and flour or wet and squeezed parchment paper, and pour the batter for the apple and carrot cake, leveling it evenly.
I sprinkle the cake with apples and carrots with sugar crystals or sprinkles as desired.
Now all that’s left is to bake at 340°F static mode for about 45 minutes or according to the specifications of your home oven.
Once baked, I let it cool and bring the simple rustic apple and carrot cake to the table!
