Today I prepared my version of the apple bouquet cake because generally this cake is made like a tart with shortcrust pastry and the apple roses rest on a thin layer of pastry cream.
I instead, to make my fruit dessert, I used ready-made puff pastry because I wanted a quick dessert without too many calories but tasty and appealing and I hope I managed with this preparation.

APPLE BOUQUET CAKE

Ingredients RECIPE Apple Bouquet Cake
- 2 rolls puff pastry
- 4 red apples
- 2 tbsp brown sugar
- 4 amaretti cookies (crumbled)
- 4 tbsp peach jam
- 2 lemons (juice only)

Preparation Recipe Apple Bouquet Cake
Wash and core the apples, cut them in half and then slice them thinly: I used the mandoline for example!
Place them in a skillet with the juice of 2 lemons and about 2 cups of water and leave on the heat for a few minutes so the fruit can soften and be easier to shape into the apple roses.
Let the apple slices cool, preheat the oven to 374°F and line your chosen pan with parchment paper.
In a small saucepan put the peach jam with a couple of tablespoons of water and leave on low heat for 3–4 minutes to create a sort of creamy glaze.
Cut the puff pastry into strips about 1 3/16 in high and approximately 6 in long.
Brush the puff pastry strips with the jam and place the apple slices so they cover only half of the pastry strip.
Now roll them up on themselves to create the apple flower and place it in the lined pan.
Continue until you have used up the ingredients (or until the pan is full — the two things are independent, haha) and then proceed to the final decoration.
Crumble the amaretti cookies and sprinkle them over the fruit roses, add the brown sugar and the peach jam if any remains.
All that’s left is to bake the apple bouquet cake for about 35 minutes or until golden and delicious.
You could also add a little butter (about 1 oz — 25–30 g) to make it shinier and…more caloric, but I didn’t do it!
Quick, pleasant, without too many frills but beautiful and tasty — that’s the apple bouquet cake…

Tips and notes
You could also use yellow-green apples (oh dear, no reference to any government intended) like Golden in addition to the red ones (I used Red Delicious) to create a color variation, but I had these at home and chose a uniform color.
Instead of brown sugar you could use a few tablespoons of wildflower honey, perhaps warmed in the microwave to make it more fluid… and you could also soften the apple slices in the microwave while still using lemon juice to prevent oxidation and browning of the fruit.
You could also add chopped hazelnuts or almonds, some raisins previously soaked in water or light rum… in short, as always I invite you to experiment and create your own apple bouquet cake!
