After subscribing to Natural Cooking I’ve been experimenting with many recipes with more raw ingredients and less sugar. Among these recipes today I tried to cook the APPLE BREAD WITH CHOCOLATE, a dessert based on a puree of blended apples and little brown sugar in the dough.
The low quantity of sugar is compensated by 50/60 grams of added dark chocolate and although it’s not a very sweet dessert, it’s enjoyable and suitable even for those looking for a low-calorie diet.
If you want a more tangy taste instead of using Golden apples like I did, use Granny Smith apples which are definitely more tangy.
APPLE BREAD is a VEGETARIAN, DAIRY-FREE, GLUTEN-FREE DISH WITH A MEDIUM GLYCEMIC IMPACT, made with rice flour, cornstarch and coconut milk and very soft!

The original recipe for APPLE BREAD with chocolate chips says serves 8 people and 280 calories per person… in my opinion the portions are much more than 8!

Ingredients for APPLE BREAD WITH CHOCOLATE RECIPE
- 2 apples
- 200 g rice flour
- 50 g cornstarch
- 60 g brown sugar
- 3 eggs (medium)
- 1 lemon (small and only the juice for the apples)
- 50 g chocolate chips (or chopped chocolate)
- 1 packet baking powder
- 70 ml extra virgin olive oil (I preferred to use corn seed oil + more for the mold)
- 50 ml coconut milk

FOR THE PREPARATION OF THE APPLE BREAD WITH CHOCOLATE RECIPE
Light cake, I would say cake for a gluten-free vegetarian diet…
washing and peeling the apples, removing the core, and chopping them into large pieces.
I then puree them with the lemon juice, then add the eggs and mix well with a hand whisk.
I continue by adding the brown sugar, oil, and coconut milk.
Now I sift together the rice flour with the cornstarch and baking powder.
I mix everything and finally add the chocolate chips which I didn’t have, so I chopped the dark chocolate which is never missing in my house!I pour the batter into the previously oiled mold (I chose a silicone mold coated with cake release) and after leveling the batter well, I bake it at 340°F static mode, baking for about 45 minutes but as always check the baking with the toothpick test!
Once baked and un-molded, the APPLE BREAD WITH CHOCOLATE is cooled and sprinkled with powdered sugar.
APPLE BREAD WITH CHOCOLATE is a light and vegetarian dessert, dairy-free and gluten-free, soft and delicate!
