Apple Cloud Cake with Lattice Cream

Of the apple cloud cake with lattice cream, I only made half a batch and I regretted it bitterly!

It’s a simple homemade treat of extraordinary goodness, a real cuddle!

Soft as a cloud and home-scented, this apple cloud cake with cream is a simple delight to make and irresistible! Its peculiarity? A delicate lattice made with homemade custard that gently blends into the original batter during baking, creating a scenic effect and a unique and delicious texture.

I prepared it with a square pan, but of course, we can use a round one and trace a concentric spiral of custard on the surface to recreate the same effect!

Ingredients

FOR THE MAIN BATTER

  • 2 Golden apples
  • 3 eggs
  • 5.3 oz sugar
  • 1 lemon
  • 2.1 oz butter (cold and melted)
  • 4.2 tbsp vegetable oil
  • 1.8 cups all-purpose flour
  • 2 tsp baking powder
  • to taste sliced almonds (about 3 tablespoons)
  • to taste powdered sugar (which this time I DIDN'T ADD YEAHHHHH)
  • 2 egg yolks
  • 1 cup milk
  • 2.1 oz sugar
  • 0.7 oz cornstarch
  • 1 tsp vanilla extract

FOR THE PREPARATION OF THE APPLE CLOUD CAKE WITH LATTICE CREAM

  • I start by making the custard, so I warm the milk in a saucepan while in a bowl I mix the egg yolks, sugar, cornstarch, and vanilla extract with the whisks.

    Then I pour the hot milk over the egg mixture and put it back on the flame, stirring and thickening the custard: it will take about 3/4 minutes!

  • Once cooked, I cover it with plastic wrap in contact and let it cool while I start preparing the base batter for the apple cloud cake with lattice cream.

  • I peel the apples and cut them into slices, drizzling them with lemon juice to prevent browning.

    I melt the butter and let it cool or at least get lukewarm.

    I beat the eggs with the sugar in a mixing bowl, be it a stand mixer or not, until they are fluffy, frothy, and light-colored.

  • I now add the melted and cooled butter, the vegetable oil, the apples, the grated lemon zest, and finally the sifted flour with the baking powder.

  • I butter and flour or use the release spray to grease the pan and then distribute the batter inside, leveling it well and sprinkling it with slivered almonds.

  • I place the custard in a piping bag and draw a lattice of cream on the surface of the apple cloud cake.

  • All that’s left is to bake the soft cake with apples and custard in a preheated oven at 356°F static, cooking for about 40/45 minutes or depending on your oven’s characteristics.

  • We turn off the oven after checking the cooking with the usual toothpick test, and then after letting the cake cool well, we bring it to the table with or without a dusting of powdered sugar.
