Here’s yet another apple rich cake with mascarpone even more delicate and fragrant, ideal for breakfast but also for snack and for the whole family, grandparents included, haha!
The cake consists of a layer of batter, a layer of sliced apples, another layer of batter, and finally more apples, so… I suggest using a pan with a height of 1.5-2 inches, otherwise, it’s a mess!!
Instead of mascarpone you can also use robiola, a creamy cheese with a gentle taste…

Ingredients for APPLE RICH CAKE WITH MASCARPONE
- 4 Golden Apples
- 4.5 oz Mascarpone
- 2 cups All-purpose flour
- 5.5 tbsps Butter (melted)
- 3/4 cup Sugar
- 3 medium eggs
- 1 packet baking powder
- 1 lemon (juice only)
- to taste Ground cinnamon
- to taste butter and flour (for the pan)
TO PREPARE THE APPLE RICH CAKE WITH MASCARPONE RECIPE
Peel the apples
remove the core and slice them.
Place them in a bowl and sprinkle with the lemon juice to prevent them from
browning in contact with air.
In a container beat the eggs and whisk them with the sugar. Then add the melted butter while continuing to mix with the whisk.
Add the mascarpone gradually and the ground cinnamon. At low speed, proceed to mix the flour sifted with baking powder and blend the batter well.
Pour about half of the batter into the greased and floured pan, level well, and place some of the apple slices on top.
Cover everything with the remaining batter and finish by covering the mixture with the remaining apple slices.
Bake in a preheated oven at 340°F for about 50 minutes or according to the characteristics of your appliance.
Unmold and let it cool completely on a rack. Dust with powdered sugar and serve the apple rich cake with mascarpone with a nice cup of tea!
