Artichokes alla Pizzaiola

Artichokes alla Pizzaiola a side dish to dip a nice piece of bread into, I would say, perfect for the season!

The artichokes are delicious but demanding in the sense that you need to clean them and there is little left to eat, but they are versatile, and we can make many recipes for tasty and flavorful first and second courses.

RECIPES WITH WINTER VEGETABLES 

FOR this recipe I used this high-sided MONETA ETNEA casserole THESE POTS ARE FANTASTIC, they have a thick bottom, go in the dishwasher, and even on the induction they are “solid”!

ARTICHOKES ALLA PIZZAIOLA

Artichokes alla Pizzaiola

Ingredients

  • 6 artichokes
  • 1/2 lemon
  • 10 oz canned tomatoes
  • 1 tsp dried oregano
  • 3 cloves garlic
  • 6 tbsps extra virgin olive oil
  • to taste salt
  • to taste pepper

Steps

  • Clearly for this recipe you first need to:

    1) prepare a bowl with acidulated water with lemon juice to prevent the artichokes from darkening (and maybe wear disposable gloves to avoid having brown fingers, to be really precise!).

    2) Discard the tougher outer leaves and also cut away part of the stem to keep only the more tender and flavorful part. Also remove the internal fuzz and the top part where in some there are thorns.Cut into wedges in half based on the recipe you want to make and put everything in a bowl with lemon juice.

    3) Cleaned to perfection for the artichokes alla pizzaiola place the vegetables upside down in a high-sided casserole and cover them with salted water and 2 garlic cloves.

    4) Cook the artichokes for about 20 minutes on very low heat.

    5) In the meantime, in a pan, put the canned tomatoes seasoned with EVO oil and the remaining garlic clove and prepare a quick tomato sauce.

    6) When the artichokes are cooked remove them from the water and place them in the sauce, continue cooking and season with more oil and a pinch of dried oregano.

    7) Serve and we are ready to taste the artichokes alla pizzaiola.

1) Use large artichokes otherwise, nothing will be left!

2) Don’t have canned tomatoes? A tomato sauce that is quite thick will work just fine, so if necessary, let it reduce on low heat for a few minutes.
