- 2 oranges (organic or untreated)
- 2/3 cup extra virgin olive oil

FOR THE PREPARATION OF THE ARTICHOKES WITH ORANGE
first, you need to prepare a bowl with water acidulated with lemon juice to prevent the browning of the artichokes.
Then I remove the outer leaves and part of the stem of each artichoke, also removing the inner fuzz of the vegetable and as I clean them, I put them in the bowl with lemon water.
I boil the artichokes for about ten minutes then drain them and dry them by patting them with kitchen paper.
In a wok, I put the EVO oil and when it’s hot, I add the boiled artichokes, placing them upside down in contact with the bottom of the pan.
Over medium heat, I let them absorb the flavor by adding the zest strips and the juice of the untreated orange, absorbing the aroma for about ten minutes.
Adjust the salt and serve.
