During lunch break, here’s a tasty avocado, walnut, and apple salad that’s crunchy, nutritious, fresh, and also creamy due to the tropical fruit.
I dressed this salad with the classic vinaigrette with apple cider vinegar and extra virgin olive oil, but adding a teaspoon of honey would also be nice… try it and you’ll see how delicious it is!
Choose crisp and very juicy apples that will blend uniquely with the creaminess of the avocado, purchased nicely ripe and with an enveloping taste.
The avocado is a fruit called climacteric, which means it can ripen even if detached from the plant, like apples, pears, bananas, etc. The simplest way to bring the avocado to the right degree of ripeness is to put it in a bag with a ripe apple in a paper bag and wait a couple of days…
How to cut the avocado to enrich a tender salad with mixed greens and/or lamb’s lettuce?
After peeling the fruit with the dark, wrinkled skin, remove the pit and cut the flesh in half.
Now cut each half of the avocado into whole slices and then in half, or continue slicing to obtain several pseudo-cubes that will mix better with the other chosen ingredients.
How to dress the salad with avocado? Personally, I wouldn’t use balsamic vinegar, which in this case has too strong an aroma, nor classic white wine vinegar, but I’d opt for apple cider vinegar or even raspberry vinegar that you can find on the blog (click on the bold raspberry word to read my little recipe, thanks!) or use honey and you’ll see how good it is!
REMEMBER
The avocado oxidizes (and in this recipe, so does the apple) and becomes dark quickly once cut, so… brush it immediately with oil or lemon to avoid that unappealing dark color!!!!!

AVOCADO, WALNUT, AND APPLE SALAD

Ingredients
- 4.4 oz lamb's lettuce
- 1 red apple (Royal Gala for me)
- 1 cup walnut kernels
- 6.3 oz Asiago cheese
- 1 avocado
- 1 lemon (juice to prevent oxidation of apples and avocado)
- to taste extra virgin olive oil
- to taste apple cider vinegar
- to taste salt

Preparation
Wash the salad (even if we bought the ready-made bags) and make sure all the leaves are intact.
Peel the apple, remove the core, and cut it into cubes or slices as you like.
To prevent oxidation (turning brown), drizzle it with lemon juice.
Same procedure for the avocado, then cut it as you like.
Place the cleaned, washed, and dried lamb’s lettuce in the salad bowl and then add the apple slices, avocado, and walnut kernels.
Prepare the dressing by mixing EVO oil (or honey), apple cider vinegar, and a pinch of salt in a cup.
Mix everything well and then pour this dressing over the avocado, walnut, and apple salad just composed in the bowl.
Serve immediately at the table and…
