Ingredients for BABY OCTOPUS IN ZIMINO
- 42 oz baby octopus
- 18 oz cherry tomatoes
- 14 oz chard
- 2 cloves garlic (crushed)
- 1 1/2 glass dry white wine
- 4 slices bread (to be toasted)
- to taste chili pepper
- to taste extra virgin olive oil
- to taste salt and pepper

Preparation for BABY OCTOPUS IN ZIMINO
Rinse the chard under running water, then boil them in a little salted water.
Drain them well in a colander.Sauté in a pan with a little extra virgin olive oil, the crushed garlic, and chili pepper.
Remove the garlic and add the baby octopus patted dry with kitchen paper.
Sauté for a few minutes, then pour in the dry white wine and let the alcohol evaporate.
Now add the cherry tomatoes cut in half. Stir well, season with salt and pepper, and continue cooking until the baby octopus are tender.
In the last minutes of cooking, toast the bread until it is golden brown. It will serve as a must-have accompaniment to enjoy this regional dish to the fullest.
