Ingredients for BABY OCTOPUS IN ZIMINO
- 2.6 lbs baby octopus
- 1.1 lbs cherry tomatoes
- 0.88 lbs chard
- 2 cloves garlic (crushed)
- 1 1/2 cup dry white wine
- 4 slices bread (to be toasted)
- to taste chili pepper
- to taste extra virgin olive oil
- to taste salt and pepper

Preparation
Wash the chard under running water, then boil it in a little salted water.
Drain it well in a colander.Fry a little extra virgin oil in a pan with the crushed garlic and chili pepper.
Remove the garlic and add the baby octopus patted dry with paper towels.
Sauté for a few minutes then pour in the dry white wine and let the alcohol evaporate.
Now add the cherry tomatoes cut in half. Mix well, season with salt and pepper, and continue cooking until the baby octopus is tender.
In the last minutes of cooking, toast the bread until golden brown, which must be served to enjoy this regional dish even more.
Serve the baby octopus in zimino in deep dishes with the toasted bread perhaps also rubbed with garlic to enhance the flavor…
