The bacon and cheese stuffed potatoes are a tasty and flavorful dish that also requires quick baking and is delicious even at room temperature.
I usually prepare stuffed vegetables like stuffed tomatoes (read→ https://blog.giallozafferano.it/asilannablu/pomodori-ripieni-di-riso/) or Greek-style stuffed vegetables or gemista (see → https://blog.giallozafferano.it/asilannablu/ricetta-verdure-ripiene-di-riso-alla-greca-gemista/) but this recipe of potatoes stuffed with cheese and bacon is an appetizing side dish that we enjoyed for dinner last night!
It’s a recipe that we can season and vary in different ways and I’ll give you some tasty ideas in the notes just below the recipe procedure.

Ingredients BACON AND CHEESE STUFFED POTATOES
- 4 potatoes
- 6.2 oz cream cheese
- 1.8 oz bacon
- 1.1 oz grated Grana Padano
- to taste salt
- to taste pepper
- to taste parsley
- to taste extra virgin olive oil

Steps
1) To prepare this delicious recipe for creamy stuffed potatoes, the first thing we need to do is…wash and boil the potatoes with their skin for about 20 minutes.
2) After this time, check the doneness of the tuber with a skewer, and when it goes through effortlessly, turn off the heat and let them cool, or rather warm the potatoes.
3) With a spoon, carefully scoop out a portion of the boiled potato trying not to break the shell which will be the base that we will then stuff generously.
4) Collect the pulp extracted from the potatoes in a bowl and mix it with the creamy cheese, leaving it a bit grainy and seasoning with salt and pepper.
5) In a small pan over high heat, brown the bacon cubes until crispy but not dry!
6) Once cooled, add them to the potato and cheese cream and adjust the seasoning of the potato stuffing.
7) Now fill the potato cavities and sprinkle each with grated Grana Padano and a pinch of chopped parsley.
8) Place the potatoes stuffed with cheese and bacon on a baking tray lightly greased with EVO oil or lined with parchment paper and then bake at 392°F allowing the flavors to melt and blend for about 25 minutes. We only have pre-cooked ingredients, so it won’t take long!
9) Once cooked, let the bacon and cheese stuffed potatoes cool, and we’re ready to taste the recipe!
