Bacon and Cheese Stuffed Potatoes

The bacon and cheese stuffed potatoes are a tasty and flavorful dish that also requires quick baking and is delicious even at room temperature.

Generally, I prepare stuffed vegetables like stuffed tomatoes (read→ https://blog.giallozafferano.it/asilannablu/pomodori-ripieni-di-riso/) or stuffed Greek rice vegetables or gemista (see → https://blog.giallozafferano.it/asilannablu/ricetta-verdure-ripiene-di-riso-alla-greca-gemista/), but this recipe of potatoes filled with cheese and bacon is a delicious side dish that we enjoyed at dinner last night!

It’s a recipe we can flavor and vary in different ways, and I’ll give you some tasty ideas in the notes just below the recipe procedure.

Ingredients BACON AND CHEESE STUFFED POTATOES

  • 4 potatoes
  • 6 oz g cream cheese
  • 2 oz g bacon
  • 1 oz g Grana Padano cheese, grated
  • to taste salt
  • to taste pepper
  • to taste parsley
  • to taste extra virgin olive oil

  • Baking Paper

Steps

  • 1) To prepare this delicious creamy potato stuffed recipe, the first thing we need to do is…wash and boil the potatoes with the skin on for about 20 minutes.

    2) After this time, check the doneness of the tuber with a skewer, and when it pierces easily, turn off the heat and let them cool, or rather, let the potatoes warm slightly.

    3) With a spoon, scoop out part of the boiled potato very gently trying not to break the shell, which will be the base that we will then stuff generously.

    4) Collect the extracted potato pulp in a bowl and mix with the cream cheese, leaving it a little grainy and seasoning it with salt and pepper.

    5) In a small pan over high heat, fry the bacon cubes, making them crispy but not dry!

    6) Once cooled, add them to the potato and cheese cream and adjust the seasoning of the potato stuffing.

    7) Now fill the potato cavities and sprinkle each with the grated Grana and a pinch of chopped parsley.

    8) Place the bacon and cheese stuffed potatoes on a baking sheet lightly greased with EVOO or lined with baking paper, then bake at 392°F (200°C), allowing the flavors to melt and blend for about 25 minutes: we only have pre-cooked ingredients, so it won’t take long!

    9) Once cooked, let the bacon and cheese stuffed potatoes cool, and we’re ready to taste the recipe!
