With the last eggplants, I prepared this cheesy and tasty dish with the addition of cheese rounds and some hazelnuts to provide benefits and crunchiness to the taste!
Baked eggplants with cheese rounds require some time to cook after cutting the vegetable’s flesh, seasoned with thyme, rosemary, and dried oregano and a nice drizzle of extra virgin olive oil.
This recipe is vegetarian, gluten-free, egg-free and with a low glycemic impact. The eggplant has a brown skin that reveals the presence of a brown pigment equivalent to anthocyanins with many healthy properties.
Instead of dressing the dish with the “usual” EVO oil, we can vigorously mix a teaspoon of mustard with one of honey and a little good oil to create an emulsion that flavors the vegetarian eggplant and cheese round dish!

- 2 eggplants
- 2 cheese rounds
- 1 oz hazelnuts
- 1 sprig rosemary
- 1 sprig sage
- 1 sprig thyme
- to taste extra virgin olive oil
- to taste salt
- to taste pepper

FOR THE PREPARATION OF BAKED EGGPLANTS WITH CHEESE ROUNDS RECIPE
Wash, dry, cut in half, and score the two halves of the eggplants with a sharp knife, making diamond cuts without actually cutting through the vegetable!
Arrange the eggplants in a baking pan without overlapping them, brush them with a little extra virgin olive oil, and add spices like thyme, rosemary, and oregano for me.
Season with salt and pepper.
I preferred to use half a cheese round per person because when it’s all melted it gets a bit too much for me, but if you prefer, use one per guest.
Bake at 375°F and cook for about 20 minutes in static mode.Once cooking is complete, remove the baking pan with the eggplants, add the hazelnuts and the cheese rounds, and put back in the oven for another 5 minutes or until the cheese melts, blending with the cooked and flavored eggplants.
Now just bring the baked eggplants with cheese rounds and hazelnuts to the table and get some slices of bread where you can put the soft and tasty eggplant with a piece of melted cheese round!
