BAKED FRITTATA WITH ZUCCHINI FLOWERS

Ingredients RECIPE FOR BAKED FRITTATA WITH ZUCCHINI FLOWERS
- 6 Eggs (medium-large)
- 10 very fresh zucchini flowers
- 2 tablespoons grated Parmesan
- 2 tablespoons cow's ricotta (sifted)
- to taste Parsley (chopped)
- 1 anchovy in oil (chopped and optional)
- to taste salt and pepper

Preparation RECIPE FOR BAKED FRITTATA WITH ZUCCHINI FLOWERS
Clean the zucchini flowers by removing the stem and central pistil.
Wash them carefully and pat them dry with paper towels to remove excess water.
In a mixing bowl, beat the eggs with ricotta, grated cheese, chopped anchovies, and season with salt (a little) and pepper.
Grease a baking pan (if circular, in my case 9 inches in diameter) and pour the mixture, then arrange the zucchini flowers in a sunburst pattern.
Bake the baked frittata with flowers at 356°F for about 20/25 minutes, depending on your appliance characteristics.
Once cooked, serve it warm or it is also excellent at room temperature for our upcoming summer dinners!
