Baked Gratinated Mantis Shrimps

Today, a delightful recipe, actually an appetizer with baked gratinated mantis shrimps!
The mantis shrimps are crustaceans also called mantis or sea cicada.
They are easily recognizable by their light color and two dark spots that look like eyes!
They generally measure from 4.7 to 7 inches, though they can be even longer.

The meat is lean, “meaty,” and prized; it’s exquisite in soups, in fish broths found in my beloved Romagna, as well as stewed, gratinated, and even shelled and fried!!!

As you can see from the picture, I was generous with the aromatic bread that fills the mantis shrimps, but we really love this crust…

BAKED GRATINATED MANTIS SHRIMPS

Ingredients for BAKED GRATINATED MANTIS SHRIMPS

  • 8 mantis shrimps
  • as needed sandwich bread (without crust)
  • as needed parsley (chopped)
  • 1 1/2 clove garlic
  • as needed chili pepper
  • as needed salt
  • as needed extra virgin olive oil

FOR THE PREPARATION OF THE BAKED GRATINATED MANTIS SHRIMPS RECIPE

  • Wash the mantis shrimps under a stream of fresh running water.

    Then clean them by removing all the various legs, removing the head (which could be used for a stock or shellfish bisque for a future risotto) and opening the top by cutting off the shell or carapace.

  • When we are done cleaning them, line a baking tray with parchment paper and brush the bottom with a little extra virgin olive oil.

    For the filling, blend the sandwich bread with the garlic and the fresh chopped parsley adding also the chili pepper (for me, dry) to the aromatic breadcrumb filling.

  • Mix well, adding a little extra virgin olive oil.

  • Now place a bit (I put a lot!) of aromatic filling on each mantis shrimp or sea cicada or mantis and continue until the ingredients are finished.

    Place the mantis shrimps on the oiled baking sheet and drizzle a bit of oil on each one.

  • Then bake the mantis shrimps in a preheated oven at 392°F for about 10/12 minutes or according to your appliance’s characteristics.

    Once cooked, let them cool for a few minutes and serve this flavorful fish dish of baked gratinated mantis shrimps at the table!
